Marc’s Oatmeal Chocolate Chip Cookies
These vegan banana oatmeal chocolate chip cookies are low fat and low glycemic. They are tasty, healthy treat and easy to make.
Ingredients
- 4 very ripe bananas
- 2cups old fashioned oatmeal
- 1/3cup vegan chocolate chips
- 1tsp vanilla extract

Instructions
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment paper or use a silpat.
- Peel bananas and mash well in bowl with potato masher or large fork.
- Add all other ingredients and stir well.
- Mold dough into 1 big rectangle shape approximately 1/2 inch thick
- Bake for 12 minutes.
- Allow to cool for a few minutes and then cut into squares
Recipe Notes
You can also add coconut flakes and raisins. Pecans and walnuts taste delicious too and add a nice crunch!
