Marc’s Mom’s Simple Salad
This simple salad is crisp and light. Romaine lettuce gives it beautiful shades of green, crunch, and plenty of vitamin K, vitamin A, folate, and molybdenum.
- 4cups chopped Romaine lettuce
- 1 cup diced tomato
- 8 sliced green olives
- 2tbsp lemon juice
- 1tsp salt
- Toss lettuce, tomato, and sliced olives.
- In order to preserve the crunchiness of the lettuce, wait until just before serving to add the lemon juice and salt.
