Delicious Vegan Blondies
We made vegan Blondies with Roots from Debbie Adler’s cookbook and loved them! They are gluten free, dairy free, cholesterol free, nut free, soy free, egg free, and sugar free. And they are oh so yummy! Our daughter, son, and his girlfriend, loved them too. This recipe calls for coriander powder and ground cardamom, which intrigued us because we never baked a dessert before that included these spices. We did not have ground cardamom, only cardamom pods. (Chickpea bought some a few weeks ago to add them to tea). Fortunately, we recently bought a small set of a mortar and pestle to work on veganizing some of Bean’s Mexican family recipes. So, we broke open about 6 pods, shook out the seeds, and ground our own cardamom…..
We also appreciate this recipe because it contains no white sugar. Its main sweetener is coconut nectar, which was a new ingredient for us. We bought a bottle at bulk foods and were thrilled to learn that this sweetener is low glycemic- its glycemic index is only 35!- so it will not cause spikes in blood sugar or a sugar crash. And it contains amino acids, minerals, fiber, and vitamins B and C.
Debbie’s instructions were easy to follow and our blondies were absolutely scrumptious!
