Pineapple and teriyaki sauce make this Rice Pineapple Salad tangy and sweet. We usually use leftover rice as the base for this recipe. Whenever we go to Thai or Chinese restaurants, we go home with a container of rice. They generously provide plenty of it, and I hate to waste food, so we take it with us. By reheating the rice in the microwave, you can sail through this recipe quickly. If you don’t have leftover rice and are in a hurry, try Success brand brown rice. If you have a lot of time and want a quality, yummy rice, we recommend Lundberg brand Organic Brown Short Grain Rice in the orange bag.
Fortunately, the restaurants we usually go to do not add any oil to the rice, and we use a fat free teriyaki sauce, making this recipe very low fat with no added oils!

Reheat leftover rice in microwave by putting rice in a microwave safe bowl, adding 3 tablespoons of water, and covering with plastic wrap. Poke 3 small holes in the top of the plastic wrap to allow some steam to escape. Microwave on high until rice is hot. This will take approximately 2 minutes, depending on your microwave. (Be careful when removing the plastic wrap so that the steam does not burn you).
Cook the frozen peas in the microwave according to package directions.
In a large bowl combine reheated rice, cooked peas, pineapple, and teriyaki sauce. Enjoy!
