Banana Butter
Our vegan banana “butter” is creamy, naturally sweet, and healthy. No cholesterol here and no added oils or fat! You can spread it on toast, pancakes, muffins, or waffles, as we did this morning when we took this picture. It is so simple, I almost feel funny calling this a recipe. For a quick, plant based breakfast, I pop frozen waffles into the toaster and while they warm up I mix up my banana butter.
- 1/2 ripe banana
- 2drops vanilla extract
- dash cinnamon
- In a small bowl, smash 1/2 banana with a fork until creamy.
- Add a couple drops of vanilla extract and a dash of cinnamon.
- Mix well.
- Spread on toast, waffles, French toast, pancakes, etc.
