University of Michigan & Meatless Monday
The University of Michigan supports Meatless Monday at East Quad dining hall! By teaming up with Planet Blue, Michigan Dining has been offering Meatless Monday three times per semester at East Quad. Today was the last Meatless Monday of winter term, and students enjoyed meatless options at breakfast, lunch, and dinner. Our son visited East quad for dinner and started his meal with a bowl of Andalusian Bean Soup with Almonds:
He also had Baked Butternut Squash, Multigrain Pilaf with Michigan Vegetables, and Kale:
And he also enjoyed Malaysian Vegetable Curry with Pickled Red Onions and Basmati Rice:
Here are some of the other items on the menu today (many options are vegan, all are vegetarian):
Breakfast: oatmeal, pancakes, veggie sausage, O’Brien potatoes, cinnamon rolls, lemon poppy seed muffins
Lunch: vegan grilled cheese, southwest corn cakes, fiesta rice, spicy black beans, stir fry station, burger crumble tacos, lasagna roll ups, kale saute, chipotle lime portabellas, Malibu veggie burger, sweet potato chips, Maize and Blue cookies
Dinner: bean soup, cream of broccoli soup, veggie deli sandwiches and wraps, veggie sushi, quesadillas, southwest rice, assorted veggie pizzas, the two entrees our son had, lemon cream cake
