One Pot Mexican Quinoa
Easy to make, healthy, and delicious–we cook One Pot Mexican Quinoa at least once a week! We found a similar recipe from a great blog called Cook Like A Champion, and adjusted it to our liking. We incorporated some of Marc’s Mom’s techniques to pump up the Tex-Mex flavor and prepare it with no oil. We also veganized it by eliminating the animal products and added more veggies. You can serve it in a bowl with your favorite toppings or wrap it into a tortilla and make a burrito. This One Pot Mexican Quinoa comes together in less than a half hour, and requires minimum clean up because you only need, you guessed it, one pot!
We love quinoa and it works wonderfully in this recipe because it is easy to make and absorbs flavors. Please rinse your quinoa before cooking it, this helps take away any bitter flavor. You’ll know your quinoa is done when it forms a little curly q type tail. It makes a simple, quick side dish and tastes great in buddha bowls! In our One Pot Mexican Quinoa it soaks up the flavors of the coriander, cumin, onion, and garlic while providing a a protein rich base to the recipe. We hope you like it as much as we do!
