Blueberry Lemon Pancakes
Our Blueberry Lemon Pancakes are fluffy and filling! They have no oil, no white sugar, whole grains and fruits packed with antioxidants. Of course, they are great for breakfast, but we usually have them for dinner or a late night snack. One of our favorite parts of this recipe is the lemony maple syrup–mouth watering, we know! We simply mix a little fresh squeezed lemon juice into real maple syrup. The sour makes the sweet stand out and the sweet makes the sour tamed and delicious.
