We love Asian sweet potatoes!
Bean and I learn a lot at our Food for Life class. Every week the people continue to inspire us and we get plenty of delicious, healthy foods to share. Because of this class we learned about a vegetable we never tried before– the Asian (sometimes called Oriental or Japanese) sweet potato. This type of sweet potato is a reddish color on the outside, but the inside is similar in color to a regular white potato. They taste mild and little sweet. And, they have a lower glycemic value than white potatoes. They provide fiber, vitamins A, C, E, B-6, and minerals such as manganese and copper. We bought a bunch, roasted them in the oven just like any other potato, and stored them in the refrigerator. Whenever we need a side dish or a sweet snack, we pop one in the microwave for about a minute and it is ready. Our dog, Max, gobbles them up too.
