One Pot Spaghetti and Meatballs
Spaghetti and meatballs is a classic, and we make it quite often in our kitchen. Trader Joe’s has recently come out with a new lentil and brown rice based spaghetti that we love! It gives this meal an extra dose of nutrients. Trader Joe’s also sells one of our favorite marinara sauces – their organic spaghetti sauce with mushrooms. It is vegan and oil-free! We also love their meatless meatballs. They are some of the most flavorful we can find.
You can use whatever pasta and plant-based meatballs you enjoy!
We make this meal in only one pot. Yes this is not very gourmet, but it is a great option for those busy nights when you don’t feel like cooking or washing lots of pots and pans. The trick is to add frozen peas and meatballs into the pasta water once the pasta is almost done cooking. This eliminates the need for any more pots or pans. The pasta water is so hot the peas and meatballs cook in just a few minutes.
Once we drain the pasta, peas, and meatballs we add them back to the pot, stir in the sauce, and boom dinner is done!
