Vegan Mint Chocolate Chip Smoothies
Vegan mint chocolate chip smoothies are a delicious way to celebrate St. Patrick’s Day! And, these green treats have leafy greens hiding inside their creamy, yummy goodness!
Chickpea developed this recipe because she loves the flavors of minty, creamy desserts. Mint chocolate chip ice cream (So Delicious makes scrumptious, nondairy ice cream desserts) is one of her favorite treats. She also used to order McDonald’s Shamrock shakes before we started our whole foods, plant based lifestyle. These vegan mint chocolate chip smoothies are better than those choices because they are lower in fat, include leafy greens, and taste great!
- 1/2cup nondairy vanilla yogurt
- 1cup nondairy milkwe use plain, unsweetened almond milk
- 10 mint leaves
- 2teaspoons cacao nibs
- 1/4teaspoon vanilla extract
- 1/4teaspoon mint extract
- 1/2cup frozen kale
- 2teaspoons agave syrup
- vegan whip toppingfor garnish, optional
- mint leavesfor garnish, optional
- Add all the ingredients (except those for garnishing) to a blender or Nutri Bullet container.
- Blend until creamy.
If you do not have cacao nibs, you can substitute 1 tablespoon of vegan chocolate chips, but leave the agave syrup out. Cacao nibs are a little bitter; chocolate chips are sweeter. After you have blended the ingredients, taste test it for sweetness. Add the agave syrup if you would like a sweeter taste.
There are several vegan whip topping items available. We prefer So Delicious brand Coco Whip.
