Saute with water instead of oil
By cutting out oils in the preparation of you food, you can cut down greatly on the amount of fat you use. To sauté with water, you need a good nonstick pan. I use hard anodized pans. To start, line your pan with about 1/8 to 1/4 inch of water. Keep a cup of water next to the stove. Turn on the burner to medium. Add the food you wish to sauté (usually for me it is chopped onions). Keep your eye on the pan and stir occasionally. Add water so that there is always a thin layer on the bottom of the pan. If you want the food to caramelize and brown a little, let the water disappear for just a few seconds. Then add another thin layer of water and stir to bring up the brown bits.
