Vegan Breakfast
Vegan Breakfast – What a great way to start the day! There are a lot of tasty options such as pancakes, muffins, waffles, hash browns, tofu scrambles, fruit, bagels and hummus, etc. Kim’s favorite breakfast is not on this list though–she loves leftovers for breakfast. This morning she had leftover Pea and Tofu Curry with a cup of coffee! (Click here to see our recipe for Pea and Tofu Curry). In fact, when there are no leftovers for breakfast, she feels a little disappointed. Her plan B is pictured above–cinnamon and raisin toast with peanut butter, a piece of fruit, and a cup of tea. She loves to dunk her toast in the tea.
Marc’s favorite breakfast is a bowl of oatmeal with a lot of cinnamon, mixed with almond milk.

On special occasions we like to make a tofu scramble with oven roasted hash brown potatoes.
These breakfast ideas taste great any time of day! Pancakes for dinner with a fruit salad is delicious, and of course cereal and (nondairy) milk is a classic midnight snack.
