Vegan Lunch Box Ideas
Here are some vegan lunch box ideas from Marc and Marissa. Marc takes some sort of salad each day. He usually buys a couple containers of baby spinach or spring mix to get him through the week. For one salad, he uses half a container. When he takes the second half to work, he uses the package from the store (as pictured here) and then recycles it. He also takes a sandwich each day. Sometimes it is a veggie sandwich with hummus, but usually he prefers a peanut butter and jelly sandwich on Ezekiel bread. He also takes a fruit and some sort of raw veggies.
In the picture shown here he took:
– a baby spinach salad with Campari tomatoes, he used balsamic vinegar from a bottle he keeps at his desk for the dressing (click here to view post about this vinegar)

– celery and carrot sticks
– purple grapes

Our daughter, Marissa, gave us some helpful vegan lunch box ideas too. She works in elementary schools, so she has to avoid nut products. Marissa likes to pack dinner leftovers for her lunch, such as veggie lasagna or a slice of lentil loaf. She also enjoys soups, nondairy yogurt, pickles, grape tomatoes, pea pods, grapes, apples, and bananas. Amy’s brand frozen dinners help her a lot too when she needs something quick and easy. They heat up fast in the microwave, fill her up, and taste great!
